docs(mintlify): generate REST API from OpenAPI specs. Wire docs.json to Mintlfiy OpenAPI, keeping api/overview. Remove hand-written endpoint MDX; ignore generated openapi/ and export zips. Add ensure-openapi check before mint validate; document codegen in readme
